Whole30 eats lately

Since my last Whole30 errrr whole25 post I promised to share more recipes… and hoped I could capture them on my actual camera.  I tried!  I snapped a few, and wanted to share.   #notafoodblogger but love food.  okra fries whole30These Okra Fries, were from The Defined Dish… but instead of her spice – which sounded amazing – I just did everything but the bagel instead, so my kids would eat them.  And they did!  Especially my oldest.

Something I’ve been making quite a bit lately is some cauliflower chicken fried rice … I’m sure there are a million recipes for this.  I start with coconut oil in a skillet with onions and garlic.  simmer for 5 minutes.  Then I add in riced cauliflower,  diced carrots , diced celery … In another pan I cook chicken and after that’s finished I’ll put it with the rice.  Once I transfer the chicken to the vegetables, I use the chicken pan to scramble eggs and once that’s done I mix it all up.  I have the coconut aminos from trader joes to use as a little “soy sauce”.  This is really good with sugar snap peas too – but I didn’t have those in the fridge!

another yummy salad.  although I prefer the primal whole30 ranch to the tessa maes.  The Tessa Mae’s has a lot of dill, so if you like that you’d love this one.  we buy the frozen salmon from whole foods for thawing out and grilling, for fairly quick protein.

When you are DYING for avocado toast.  Which was my breakfast many mornings pre-whole30.  Enter Sweet Potato Toast.  Here’s the recipe I used.

and nothing fancy, but eggs and avo.  with shocker – everything but the bagel seasoning.  so if you do nothing else, get to a Trader Joe’s, and get you some of that!

this had yummy tomatoes, whole30 compliant bacon, soft boiled eggs, carrots, avo, red onion, pepitas, and primal balsamic.
