My mother was diagnosed with celiac disease a few years ago.  Seeing how eating gluten free has made such a positive impact on my mothers health, it has opened my eyes to all it entails too.  How hard it can be at parties!  It took me a while to consistently be mindful of it, especially at gatherings.  I find myself reading labels and looking for “GF” on them all the time now.  These days when we have everyone in my family over, we try to make the entire meal – from appetizers to desserts – with gluten free options.  Two other members of our family are gluten sensitive, so it just makes sense to create meals that are gluten free.  Which, for me, requires some planning.  It’s insane to me how much has gluten in it!  Things you would never think of!

 

Freshetta Gluten FreeMy parents have us over at least once a week for dinner, so it’s nice to pay them back with hosting at our home every once in a while.  The last thing I would want is for her to worry about whether or not we’ll have enough food she can actually eat!  This Friday we celebrated my mother’s birthday (along with Celiac Awareness Month) a little early this year, on the fifth of May, which we called Cinco De Nano.  With the wedding coming up this this weekend, she requested no party until afterwards, but we surprised her on Friday!  Everything was gluten free, the theme was pretty much “gluten freedom”. (:  Last time we had everyone over we went the easy route and ordered pizza, but they didn’t have gluten free pizza, so my mom had to have something different.   I can’t imagine staring at a pizza, and not being able to eat it!  This time she had some pizza!  Everyone was shocked the Freschetta Gluten Free Pizza was gluten free.  You can check out where it’s sold in your area here.

My sister especially couldn’t believe it was!  Gluten free bread can be a little tricky to get right, but they have.  It was so good!  I love the thin crust, and the boys ate it up too.   Tuck helped customize the pizzas with onions, tomatoes and roasted garlic.  From now on, I am stocking our outside freezer with these.  It’s so nice to have something quick like this that I know is gluten free.  Now for lunch or dinner, if my mom stops by or is watching the boys, it’s great to know she always has an option at our house.
